Simple Vegetarian Lunch Ideas?
I've been a vegetarian for a while now, but I stopped paying attention to my diet. So, I've decided to begin with healthier lunches for school. Right now I usually stuff a granola bar and piece of fruit in my bag and head out the door. So far I have the following ideas:
1/2 peta bread with humus, lettuce, diced tomatoes, and cucumbers
1/2 burrito with brown rice, black beans, lettuce, tomato
Salad- almonds, peppers, cucumbers, tomatoes, onion
Brown rice with corn, soybeans shelled and frozen, red pepper (found this one online)
Pasta with red sauce and beans
Brown rice with white beans
Tempeh Stir fry
Along with each some veggies with dip or a piece of fruit. I was thinking of making them the night before for dinner, but using the left overs for lunch.
Would this not be a good enough variety of food?
What simple lunches do you take with you?
(I'm trying to cut down on dairy products and I don't eat eggs)
Here are some things that I usually pack with myself when I am out around lunch time:
1. Fruit Salad
2. Fruit (Grapes, Apple, Orange, Strawberries, etc.)
3. Veggies + Dip
4. Crackers + Cream Cheese or Cheese of your choosing (I know your trying to cut back but!) + A Fruit (i.e. Apple, Pear or Peach slice) or Cucumber
Pita Sandwich's
You can get as creative as you like. I won't go into great detail but I will give some direction:
Ingredients
Pita Bread
Favorite Veggie Combo (Tomato, Cucumber, Lettuce, Beans etc.)
Favorite Cheese (optional)
Favorite Oil/Herb Dressing
Mix and match however you want. I usually make a salad of sorts stuffed inside a pita. Best way to go about this is mix the veggies/cheese/dressing in a bowl and stuff in the Pita after wards. If you want to set the dressing aside you can put it in a tiny container and put it inside the Pita when you plan on eating it.
Traditional Sandwich
Something I eat on a regular basis is a Toasted Cucumber Sandwich.
Ingredients
- Cucumber
- Romaine Lettuce
- Tomato
- Onion (sliced thinly - very important - enhances the overall flavor)
- 12 Grain Bread
- Favorite Dressing
All you have to do is cut up the vegetables, toast your bread and put it all together. Put your favorite dressing on the vegetables and it makes for a yummy lunch. If you want you can toss on some cream cheese or cheddar. I never put it on this sandwich just cause it tastes good as is.
Salads
Who needs to be traditional. Get creative. Some extra yummy salads that I have tried are a Cucumber Salad (no lettuce) and Tomato Salads (no lettuce).

Veggie Stir Fry and/or Rice
Again! The sky is the limit. Go as crazy as you want. If you want something quick I recommend getting the frozen veggie stir fries in the grocery store. You can cook it up the night before fairly quickly and put it in a sealed dish to take with you the next day. You can also put your stir fry over top a nice bed of rice.
Rice is great. Spices go a long way with rice. Zest it up. Use some Lemon Zest/Orange Zest/Lime Zest. Beans are a great thing to add into rice. So are things like corn and peas.
